Al-Ahsa:A scientific study conducted by a research team at King Faisal University has unveiled promising results regarding the use of Al-Hasawi lime and date molasses in the development of functional nutritional beverages.
According to Saudi Press Agency, experiments showed that combining these ingredients with inulin can significantly enhance the nutritional and biological properties of juices. This combination also improves the stability of certain components during processing and storage.
The study indicated that samples enriched with 15% date molasses achieved a total phenolic content of 95.6 mg gallic acid equivalent per 100 grams, compared to 38.5 mg in non-enriched samples. Additionally, antioxidant activity increased from 15.9 to 55.9 micromoles of Trolox equivalent per milliliter, underlining the potential of locally sourced ingredients to boost the nutritional properties of juices.
King Faisal University stated that this research demonstrates the institution's dedication to focusing scientific research on food security, sustainability, and the bioeconomy, while generating scientific knowledge rooted in the resources and comparative advantages of Al-Ahsa.
